Fried Green Tomatoes & Rainy Chickens
It is fall in Portland, which means one bad thing: my garden is dying! It is too cloudy to ripen the dozens of plump green tomatoes still left on the vine, so tonight I decided to make fried green tomatoes! I used a fabulous recipe from VeganYumYum.com.

The full meal: drizzle balsamic vinegar and place on a bed of greens (fresh from the garden, of course!), and chopped black olives.
Today it stormed….
The chickens don’t mind the rain too much. However, the do become quite muddy in their chicken run. And poor Little Miss, with her head full of feathers, gets muddy dreads from the rain!

Triple Layer Yum Pie!

Triple Layer Yum Pie
Non-dairy, gluten-free, sugar-free, 100% raw!
Crust: Fancy dates, almonds, almond flour
First Layer: Thinly sliced kiwi
Second Layer: Pureed bananas and dried coconut
Third Layer: Dried coconut, sliced strawberries
Topping: Chocolate sauce made with raw agave & cocoa powder
This pie lasted 1 day in my house–it was a big hit!

Pancake: Ground flaxseed, pureed banana, raw agave
Coconut Creme: Young thai coconut meat, cashews, vanilla, water
Top with fresh organic strawberrues, raw agave, and raw walnuts.

Ah-Mazing Oatmeal

Oatmeal doesn’t have to be boring. If put together properly, it can be a meal in itself!
Ingredients:
1/2 cup rolled oats
1 cup soy milk or water
1 apple, cut into small bite-sized pieces
1 tablespoon ground flaxseed
1 teaspoon ground cinnamon
1 tablespoon agave syrup
Peanuts
Combine the oats and soy milk/water into a saucepan over low-medium heat. When it starts to cook, add the flaxseed, cinnamon, and agave syrup. Stir occasionally. Once the oats begin to absorb the soymilk/water, add the apple chunks. When the apples are cooked and the consistency has become more substantial, remove the oatmeal from heat and let cool for a moment. Pour into a bowl, top off with peanuts and violla! Delicious, exciting, healthy oatmeal! For a more tropical appeal, try bananas, coconut shavings, and sliced almonds instead of apples, cinnamon, and peanuts.
